Celebration Lemon Cupcakes
I made these super yummy cupcakes for easter dinner. Everyone loved their light taste and just the right amount of sweetness. You need to try them sometime. They are very easy to make and are a nice change to the regular everyday cupcake (I love them too though). So here's the recipe make them for the people you love!
Celebration Lemon Cupcakes:
1 pkg. white cake mix
1 pkg. Instant Lemon Pudding
1 cup water
4 egg whites (lightly beaten)
2 Tbsp. oil
Combine all ingredients in a mixer, and beat on medium speed for 2 minutes.Bake at 350 for 21 minutes.While you wait make the sweet and lemony frosting. Let cool completely before frosting!
Cream Cheese frosting:
1 pkg. (16 oz.) powdered sugar
1 pkg. (8 oz.) Creme Cheese
1/4 cup butter
4 Tbsp. fresh lemon juice
2 Tbsp. milk
Creme the creme cheese, butter and powdered sugar. Then add the lemon juice. If the frosting is too thick slowly add milk until desired constancy. Frost cupcakes and sprinkle with some lemon zest for a fun touch.
